I'm also going to be messing with fonts and colors until I find one I really, really like. Can someone tell me if there is a way to set my choices as defaults?

The only way I know to set colors and fonts as default is to put them into the blog template, or into the post template. The post template is less scary to mess with. Try this: when you've got them the way you like them, open the post back up as "edit". Then click the "edit html". Copy the html for the font and color codes. Then click the settings tab and scroll down to "post template" and paste the html in there. Then whenever you create a new post Blogger should automatically paste in the font and color codes for you. I've not tried it, but it should work.
